Preheat your oven to 350°F (175°C).
In a blender, combine 4 eggs, 1/2 cup cottage cheese, onion powder, garlic powder, and salt to taste. Blend until smooth.
Divide the egg mixture evenly among two oven-safe meal prep dishes.
Dice 1 small bell pepper, 1/4 small yellow onion, and 4 oz thick-cut ham steak.
Sprinkle diced vegetables and ham evenly over the egg mixture in each container.
Add 1/4 cup shredded cheddar cheese to each container, gently stirring to distribute.
Sprinkle 2 tbsp of shredded cheddar cheese on top of each dish for garnish.
Bake in the preheated oven for 40 minutes, or until eggs are fully cooked and cheese is melted and golden.
