Ingredients

  • 4 eggs
  • 1/2 cup cottage cheese
  • 1 small green bell pepper
  • 1/3 yellow onion small
  • 4 oz Thick cut ham steak
  • 1/2 cup shredded mild cheddar cheese
  • 1/4 cup cheddar cheese for garnish

Instructions

  • Preheat your oven to 350°F (175°C).
  • In a blender, combine 4 eggs, 1/2 cup cottage cheese, onion powder, garlic powder, and salt to taste. Blend until smooth.
  • Divide the egg mixture evenly among two oven-safe meal prep dishes.
  • Dice 1 small bell pepper, 1/4 small yellow onion, and 4 oz thick-cut ham steak.
  • Sprinkle diced vegetables and ham evenly over the egg mixture in each container.
  • Add 1/4 cup shredded cheddar cheese to each container, gently stirring to distribute.
  • Sprinkle 2 tbsp of shredded cheddar cheese on top of each dish for garnish.
  • Bake in the preheated oven for 40 minutes, or until eggs are fully cooked and cheese is melted and golden.
