Ingredients

  • 1 1/4 cups Diced Russet Potatoes about 1 large potato
  • 20 oz Chicken breast cut into 1 inch pieces.
  • 2/3 cups sugar free BBQ sauce
  • 1/3 cup yellow onion Diced
  • 1 tsp olive oil
  • BBQ Seasoning to taste

Instructions

  • Preheat the oven to 350°F (175°C)
  • Dice the potatoes and onions, then divide them evenly among 5 meal prep containers.
  • Drizzle the diced potatoes and onions with olive oil and sprinkle with BBQ seasoning to taste.
  • Season the chicken pieces with BBQ seasoning, then add about 4 oz of chicken to each meal prep container
  • Pour approximately 2 tablespoons of BBQ sauce over each container, ensuring that everything is well coated.
  • Sprinkle 1/4 cup of shredded cheddar cheese over each container for that gooey, cheesy goodness.
  • Place the meal prep containers in the preheated oven and bake for 40 minutes, or until the chicken is cooked through and the potatoes are tender.
  • Once out of the oven, top each meal prep bowl with an extra drizzle of BBQ sauce for added flavor.
