Among the many pasta dishes, one of my favorites was always fettuccine Alfredo. There was something about the creamy, cheesy sauce that captivated my taste buds. However, as I grew older and became more health-conscious, I sought out ways to enjoy the flavors I loved while still meeting my nutritional goals. Crafting the Creamy Alfredo Sauce
In a blender, combine the cottage cheese, Parmesan cheese, milk, minced garlic, salt, and garlic powder. Blend until smooth and creamy, creating a protein-packed Alfredo sauce that’s sure to satisfy your cravings.
Building Layers of Flavor
Preheat your oven to 350°F. Now, it’s time to assemble our lasagna bake. Begin by dividing the broken lasagna noodle pieces evenly among your meal prep containers. As a Bariatric patient I only use three noodle divided amongst the five containers. If you are a non bariatric patient I highly recommend doubling the noodles in this recipe.
Next, pour a generous amount of Alfredo sauce over the noodles, ensuring they are fully saturated with flavor. Now, it’s time to add the protein. Cut up the chicken breast into bite-sized pieces and divide them evenly among the containers.
Adding Nutrient-Rich Greens
To add a pop of color and nutrients to our dish, add a quarter cup of broccoli florets to each container. Not only do these vibrant greens enhance the visual appeal of our lasagna bake, but they also contribute essential vitamins and minerals to our meal.
Bringing It All Together
Pour the remaining Alfredo sauce over the assembled ingredients, making sure to cover everything evenly. Give the contents of each container a gentle stir, being careful not to disturb the layers of noodles below. Finally, top each container with two tablespoons of Parmesan cheese, adding a finishing touch of cheesy goodness.
Bariatric-Friendly Tips
As a bariatric patient, I understand the importance of prioritizing protein while being mindful of carbohydrate intake. If you’re in a similar situation, consider doubling the amount of protein-rich chicken in this recipe while reducing the quantity of noodles. This modification ensures you still get the protein you need while keeping your carbohydrate intake in check.
Into the Oven
Place your assembled lasagna bake containers in the preheated oven and let them bake for 40 minutes, allowing the flavors to meld together and the cheese to become golden and bubbly.
